12/20/14 Saturday – Side of Greek
While I was in Alaska visiting the kids, Saphy threw this salad together. Even though I know Saphy is an excellent cook, to say the least, I hesitated to taste it because I've never really been a fan of eating cold pasta. But this salad looked deliciously colorful and the smell of it lured me closer and closer until temptation overruled the picky eater in me. One bite and I was hooked! Oh my, was I in taste bud Heaven. Here's the recipe:
1 box Tri-Color Rotini Pasta
5 oz. Cherry Tomatoes, cut in half
1/2 Red Cabbage
1/2 Cauliflower
1/2 can Black Olives, pitted
2 Cups Corn
5 Button Mushrooms
Purple Onion
Diced Ham or Salami
Feta Cheese
Drizzle of Extra Virgin Olive Oil
Pinch of Italian Seasoning
1 Cup Zesty Italian Dressing
The amount of each ingredient varies. Like Saphy, I don't measure when I cook. I just kinda throw it all together. Give it a try!

12/12/14 Friday – Wonton Poppers
These are delicious:
Place 1 teaspoon cream cheese in the center of each wonton wrapper.
Lightly brush edges of wonton wrappers with water, fold each wrapper in half, and pinch edges to seal.
Place assembled wontons on a greased pan and lightly brush them with cooking oil.
Bake in a preheated oven at 400 degrees Fahrenheit until wontons are crispy and golden in color; approximately 5 to 7 minutes.

I had to get creative with what we had left in the refrigerator. Texas Toast, American cheese, rotisserie chicken, red onion. I know! Open-faced sandwiches! Yum!

12/04/14 Thursday – Mexican Meal
Homemade chicken enchiladas with refried beans. Hubby and I can eat this stuff for a whole week straight! Delicious!

11/18/14 Tuesday – Apple Dippin
This is the only way I make caramel. Submerge an unopened can of sweetened condensed milk in water, boil it for 4-8 hours. Always keep an eye on it to make sure that the can is covered with at least an inch of water the entire time. When done, let the can completely cool before opening. I submerge the can in ice cold water and just let it sit in there for a few hours. After the can is completely cooled you can open it. It's the best caramel ever!

We went out to eat tonight and ma ma insisted that I try a pair of her frog legs. The kind you eat. I've never tried them before and the thought of it made me...well, it made me kind of sad. Poor frog. I love frogs. Live frogs. Hopping frogs. Happy frogs. Not the thought of fried frogs. I cringed and shook my head no, no, no. Ma ma is persistent. I tried the frog legs. Two of them. Tastes like chicken; a gourmet chicken. But is it really worth it? All that work for that teeny-tiny bit of meat? Nah.
